Who Loves Scones? Part 1

Over the next several weeks, I'm going to be doing a three part series about my family's very favorite breakfast and/or afternoon snack choice: SCONES!  I'm so excited to share some of my most beloved recipes with you!

They may sound rather fancy, like something you'd only eat if you were Lady Mary on Downton Abbey, but scones are super easy to make and so delicious.  They're for everyone--even my picky kiddos!  And what's not to love?  You can add all sorts of your favorite ingredients to them for a truly personal touch.

Last summer, my kiddos and I got into a fun routine of having a little afternoon tea in tiny espresso cups and a scone while we listened to an audio book together.  It was a nice way to have a few quiet moments together and to have a planned activity that didn't involve any screens.  When Luca went to Kindergarten last fall we let this habit go, but I think it's time to resurrect it for the summer!  Scones are pretty similar to cookies (at least in my children's estimation) so they really do make a nice little snack.

This week's installment is my family's go-to scone: Chocolate Chip.



Chocolate Chip Scones Ingredients:

2 c flour
1/3 c sugar
1 T baking powder
½ tsp salt
¼ c mini chocolate chips
¼ c dark chocolate chips
1 ¼ c heavy cream

Instructions:

Preheat oven to 425*F.

Stir all ingredients together in a bowl until mostly incorporated.  Using your hands, knead the mixture a few times, scraping the sides of the bowl to work in any lingering flour.  Turn out onto a floured counter or sil-mat, dividing into two even balls.  Flatten each ball into a disc about ¾” thick, then cut into sixths, creating 12 wedge shaped scones.

Place onto a lightly greased baking sheet and bake in preheated oven for 12-15 minutes until lightly browned.  Cool on a wire rack.  Enjoy with your favorite hot or iced beverage!

Makes 12 scones.
